Summer Squash Surplus

We have had so many Patty Pan and Zucchini squash we are about sick of them.  I took about 10# to the Salvation Army Food Bank yesterday.  I would hate to see them go to waste.  We have made zucchini bread, eggs, sausage, and squash scramble, zucchini relish, steamed squash, etc.  I need new ideas for how to use summer squash.  Any ideas out there in blogland?  HELP!

  1. Have you tried squash casserole? You can make some and freeze them. I also love stuffed squash – with meat or with bread crumbs, cheese, onions, and herbs. Also, we made squash “pasta” recently. It was delicious and much better for me than wheat pasta. Just use a veggie peeler or mandolin slicer to make long thin ribbons. Just don’t slice into the seeds or they will disintegrate. We have squash bugs that almost destroyed our summer squash. Enjoy your harvest!

      Thanks for checking out my blog and also for the ideas. We have had stuffed zucchini before but will give the casserole and pasta ideas a try.
